A precious jewel among Zenato’s production, it comes from the selection of the best Valpolicella Classica grapes (Corvina, Rondinella, Oseleta and Croatina) grown in vineyards in the village of Sant’Ambrogio. The grapes are laid out to dry for 4 months and only in January pressing is begun, which is followed by a slow fermentation on the skins and then aging for 36 months in large Slavonian oak barrels. After a period of bottle aging, it is ready to be enjoyed.
